Pineapple Beet Cake
2 c. sugar
1 1/4 c. oil
3 eggs
2 tsp. vanilla (extract only)
1 tsp. salt
2 1/2 c. + 2 tsp. flour
2 tsp. soda
2 tsp. cinnamon
1/2 c. coconut
1 c. chopped pecans
1/2 c. drained pineapple
1 (16 oz.) can undrained shoestring
beets
Preheat oven to 350 degrees. Prepare a
flat pan or sheet cake pan for baking
(Floured over Crisco.) If using flat
pan, cookie sheet with sides. Bake 25
minutes or until slightly moist. If
using sheet cake pan, bake longer.
Either case, check in middle or close
to, with toothpick, always taking cake
out with a little show on toothpick. Use
cream cheese frosting with vanilla
extract and real butter.
