Orange and Beet Salad
1 c. orange sections
1 c. julienne beets, drained
1 apple, cored and cubed
1/4 c. olive oil
2 tbsp. orange juice concentrate
1 tbsp. lemon juice
1/2 tsp. dry mustard
1/2 tsp. salt
Stir together and put in refrigerator
the oranges, beets, and apple. Combine
the remaining ingredients in a shaker
jar; shake well and refrigerate until
use. Serve salad on lettuce or spinach
leaves on individual plates. Pour
dressing over top.
