Beets Casserole
8 to 12 medium beets
1/4 c. butter (or margarine)
1/4 c. honey
1/2 tsp. salt
Scrub beets well with stiff brush, but
do not peel. If there are tops, remove
them. Parboil beets about 45 minutes or
until a fork will just pierce them.
Drain well; remove outside
skin. Place beets in a baking pan, dot
with butter, pour honey over all. Season
with salt; cover and bake in oven (350
degrees) for 1 hour and 25 minutes,
basting occasionally.
