Beef Mexican Corn Bread
2 lb. hamburger, browned
1 large onion, chopped
2 green peppers, chopped
Kraft American cheese slices
1 can creamed white corn
1 box Jiffy corn bread mix
Brown hamburger. Cook onion and green peppers in water by
themselves. Drain hamburger. Mix corn bread mix (thinner).
Layer corn bread (1/2 of corn bread mix) on bottom of pan (I
use iron-skillet). Add hamburger. Drain peppers and onions
and add to hamburger. Add creamed white corn (with little
milk) on top of green peppers and onions. Cover with cheese
slices and cover with remaining corn bread mix. Bake at 375
degrees for 45 to 50 minutes or until brown.
