Bisquick Apricot Pie
1 cup Bisquick baking mix
3/4 cup sugar
1/4 cup butter, softened
1 teaspoon vanilla
3 eggs
1 (17 ounce) can apricot halves, drained
1 (12 ounce) can evaporated milk
1/2 c. apricot preserves
Preheat oven to 350?.Grease 10-inch pie plate. Mix Bisquick, sugar, butter,
vanilla, eggs, apricot halves and evaporated milk; blend until smooth, about a
minute. Pour into pie place. Bake until knife inserted in center comes out
clean, about 40 minutes. Cool completely. Heat preserves over low heat until
melted. Spread over pie and cool.
