Microwave Trout Fillet with Almonds
1/3 c. slivered almonds
1/4 c. margarine
1 1/2 lb. trout fillets
1/2 tsp. salt
2 tsp. fresh or frozen lemon juice
To toast almonds: Place almonds and margarine in an 8 x 8 x 2-inch glass dish.
Microwave on High for 5 to 7 minutes, or until almonds are golden brown,
stirring once. Remove almonds with slotted spoon; set aside. Add trout fillets
to margarine, turning to coat. Cover and microwave on High for 6 to 7 minutes or
until fish flakes with fork. Sprinkle with salt, lemon juice and reserved
almonds.
