Mandarin Almond Salad

1/2 head lettuce, shredded
1 c. celery, chopped
1 Tbsp. parsley, minced
2 green onions and tops, chopped (can substitute chives)
1 can Mandarin oranges, drained
1/4 c. caramelized sliced almonds
2 Tbsp. sugar, to caramelize almonds

Dressing:
1/2 tsp. salt
dash of black pepper
2 Tbsp. sugar
2 Tbsp. vinegar
1/4 c. salad oil

Combine in a jar; shake vigorously and serve on the salad. Top with caramelized almonds. Caramelize almonds by adding sugar and stirring over low heat in a skillet until sugar melts and collects on almonds. Cool. Combine lettuce, celery, onions, oranges and almonds. Toss and serve.
