I have served this on crusty French bread and used
the Au Jus as a dip, serve with a salad
makes a great meal.
Roast Beef Au Jus
4 pound beef tip or top round roast
Seasoning salt and pepper
Au Jus (See below)
Place roast on rack in shallow roasting
pan. Season with salt and pepper. Insert
meat thermometer into center of thickest
muscle, not resting in fat. Do not add
water. Do not cover. Roast in 325° oven
for 20 to 25 minutes per pound or until
meat thermometer reads 135° to 140°.
Remove roast, tent with foil and let
stand 15 minutes in warm place. Prepare
Au Jus. Slice roast, across the grain,
into thin slices. Place slices in
serving dish and cover with hot Au Jus.
Keep warm (at least 140°) in chafing
dish or slow cooker for serving. Serve
as sliced beef or on a bun with Au Jus
as a French Dip.

2 cups beef broth or bouillon
1/3 cup brown sugar
1/4 tsp. Lawry's seasoning salt
1/2 tsp. Liquid Smoke
