Nancy, I can't remember who sent in the Hawaiian Grape Salad. I have been searching for it, as I would like to make it for Easter dinner. It sounded so good that I thought I would make it, but, I now can't find it. So if anyone one out there has it would you please send it to me or tell me where I can find it. In the 3/28 nl June from Mo. was asking for a recipe for tomato relish with cabbage. Here in one I found in one of my 1963 cookbooks (has been years since I have made this) but thought it might be what she was looking for.


Tomato Relish with Cabbage

6 large sweet green peppers
3 large red peppers
1 medium head cabbage
2 large onions, peeled
1 gal green tomatoes
1 qt vinegar
1 c. white sugar
1 c, brown sugar
1 tsp cinnamon
1 tsp allspice
1/2 tsp salt.

Chop or grind peppers (seeds discarded), cabbage, onions & tomatoes. Combine all ingredients in a large kettle and boil gently for 30 minutes. Ladle into hot, sterilized jars, seal at once. Process in boiling water bath (212 degrees) for 5 minutes.

Makes 12 pints

Hi Nancy, thanks again for all you do...it can't be said enough!

This recipe is for Marilyn in Ohio although I don't think it needs to be pureed, just mix dressing and mix gently into potatoes and apples:

Harvest Sweet Potato and Apple Puree-Martha Rose Shulman for 6: Preheat the oven to 425 degrees F. Line a baking sheet with foil. Pierce 2 lbs. sweet potatoes and 2 large tart (Braeburn, Pink Lady or Granny Smith) apples in several places with a sharp knife and place on the baking sheet. Bake until tender and beginning to ooze, about 30 minutes for the apples, 45 minutes to an hour for the sweet potatoes. Remove from the heat and allow to cool until you can handle them. Lower the oven to 350 degrees F and butter a 2-quart baking dish.

Skin the potatoes, and peel and core the apples, scraping any pulp that adheres to the skins. Cut the apples and potatoes into large pieces. Puree in a food processor fitted with the steel blade until smooth. Add 3 T lime juice, 1/4 c plain low-fat yogurt, 2 T melted butter and 1 T mild honey, plus salt to taste and blend together well. Transfer to the baking dish. Heat in the oven until steaming, 20 to 30 minutes. Serve hot.

Susie in northeastern Illinois, you can find the sure gel/clear jel thickener with the canning stuff in most stores. In our Super Walmart, it is in the household section with the canning jars, etc. Good luck! That is all I use! Chris in NM

grandmao,IL, it all depends on what dish you want to make as to a substitution for using dry onion soup mix. Generally it is used for flavor and spices in a dish or burgers. Chris in NM

This is my T & T recipe for sugar cookies.

Sugar Cookies
Makes: 5 dozen 2-inch cookies

1 1/2 cups powdered sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
2 1/2 cups Gold Medal® all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
Granulated sugar or colored sugar

1. Mix powdered sugar, butter, vanilla, almond extract and egg in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours.
2. Heat oven to 375ºF. Lightly grease cookie sheet.
3. Divide dough in half. Roll each half 1/4 inch thick on lightly floured surface. Cut into desired shapes with 2- to 2 1/2-inch cookie cutters. Sprinkle with granulated sugar. Place on cookie sheet.

As for Marilyn in Ohio looking for a sugar-free sweet potato casserole recipe, I would find a recipe I liked and just substitute any sugar with Splenda (the white or brown). I have done this with many recipes and they came out OK. I love the Road House Grill's Yams. I use the brown sugar on them but be careful the Splenda brown sugar is very sweet I use less then recipe calls for when baking with it.

June/MO is looking for a "Green Tomato Relish" with cabbage & peppers in it. Hope this is some help.

Green Tomato Relish

4 cups green tomatoes, ground (about 10 medium sized tomatoes)
4 cups ground onions
4 cups ground cabbage
12 green peppers, ground
6 sweet red peppers, ground

Grind the vegetables. Pour into a large roaster pan or canner. Mix ½ cup of pickling salt throughout. Let stand overnight. In the morning, put through a colander and rinse thoroughly. Drain and return to pan. Cover with the following:

4 cups dark cider vinegar
2 cups water
6 cups sugar
1 tablespoon celery seed
2 tablespoons mustard seed
1½ teaspoons turmeric

Heat to boiling and simmer for 3 minutes. Pack into hot sterilized jars and seal. Makes about 8 pints.

From Becky in MagTown Arkansas: Someone wrote in asking if I live in Magazine, Arkansas...... no, I live in Magnolia, Arkansas, which is located in the southwest part of the state, not far from the Louisiana border. We live out in the country on 3 acres of land surrounded by trees and pasture-land - it's a little piece of Heaven on earth! In addition to our pets (a dog and cat that love to play with each other) we regularly feed all sorts of critters - birds, hummingbirds, squirrels, flying squirrels, deer, possums, raccoons, and foxes. We also often see critters we DON'T feed - such as armadillos, wild turkeys and skunks!

Hello Nancy, kitties and everyone,
I finally bought myself a Zojirushi Bread Machine. I have been reading reviews on this machine for quite some time and decided to splurge. It makes a two-pound loaf of bread. I have been attempting to make a healthy bread using the recipe book that came with this machine. I haven't had much luck so far. It is not the consistency or taste I am looking for. Most of my breads seem to be doughy tasting when the bread is not toasted. I was wondering if anyone in Nancyland would have a tried-n-true recipe for a healthy 2 pound loaf of bread that doesn't use white flour. Thank you.

Just wondering if anyone saw Sandra Lee on TV yesterday. She made her own colored sugar. Below is how she did it on her program. Of course you could increase or decrease for the amount you want. Certainly a lot cheaper and it only takes minutes to do.

For colored sanding sugar:
1 cup sugar
8 to 10 drops each food coloring in 2 different colors

Divide the sugar between 2 small resealable plastic bags. Add 8 to 10 drops of 1 color of food coloring to each bag. Shake vigorously to distribute and color the sugar. colored sugar

I hope I am sending this to the right address. This recipe is for Kyra in Florida for her luau fundraiser from the Saturday, March 26 newsletter. She has a good memory as to where it came from except it wasn't a Christmas book. Fortunately I never get rid of my books so I had to look through a few but found the one she wanted.

Margarita Pie

3 cups small pretzels, crushed (about 1 1/2 cups crumbs)
2/3 cup butter or margarine, melted
1 envelope unflavored gelatin
1 cup liquid margarita mixer, divided
2 cans (14 oz. each) sweetened condensed milk
1/3 cup tequila
5 Tbs orange liqueur
2 to 3 drops green food coloring
Lime slices for garnish
For crusts, combine pretzel crumbs and butter in a small bowl. Press crumb mixture into bottom and
up sides of 2 8" pie pans. Place in refrigerator to chill.

In a microwave safe measuring cup, sprinkle unflavored gelatin over 1/4 cup of margarita mixer. Let mixture stand for 2 minutes, then microwave on high for 40 seconds; stir thoroughly. Allow to stand 2 additional minutes or until gelatin is completely dissolved. In a large bowl, combine gelatin mixture, remaining 3/4 cup margarita mixture, condensed milk, tequila, liqueur and food coloring until well blended and smooth. Divide filling equally between crusts. Chill until firm. Garnish with lime slices.. Cover and refrigerate.
Yield: 2 8" pies

For Brenda in IN. I am wondering what part of FL you are visiting? Do you have an RV? I just learned that they are building a new RV park just a short distance from where I live in Navarre, FL on the water. It will be a beautiful setting once they are finished. It is my understanding they will be clearing the land the first of April ... just a few days from now. If you have not visited NW FL, it is a gorgeous place with beaches where the sand is as white as snow and so fine that it squeaks when you walk in it.

In my Maine cook book it is calling it "Indian Relish"...but it does list ingredients you were asking for. So hope this helps.

Indian Relish

1 peck green tomatoes
1 cup salt
chop green tomatoes, sprinkle with salt. let set over night. Drain, then add:

1 medium cabbage chopped fine, 3 quarts vinegar

Boil slowly for 30 minutes, then add:

6 onions chopped
3 hot red peppers, chopped
2 sweet green peppers, chopped
8 cups sugar
2 tablespoons celery seed
2 tablespoons mustard seed

mix this together. Then make a small cheesecloth bag, put one tablespoon
stick cinnamon and one tablespoon whole cloves into bag and tie securely, then place in pickle mixture. Cook altogether until vegetables are soft. ladle
into sterilized jars and seal immediately.

I'm replying to Brenda in Indiana about washing clothes in cold water. More than 20 years ago my neighbor told me she washed all their clothes in cold water. I thought she probably had dingy clothes, but didn't care since she is quite the penny pincher. I figured she was trading money for cleanliness. Than I got to know her better and began to pay attention to her clothes when I'd see her, especially her white clothing. They seemed just as clean as mine, so I thought I'd give it a try. Long story short: I've been washing my clothes in cold water ever since and even things that are stained come clean if I pre-treat them. But; you need to pre-treat stains washing in hot water also. Washing in cold water saves money, energy, clothing doesn't shrink,
elastic doesn't deteriorate as quickly, clothing doesn't fade as quickly, etc.

For June/MO - This is a recipe I have been making for years. It's from a cookbook that the women's group at our church put together when I was a child.

Winter Relish

8 green tomatoes
6 large onions
1 small head cabbage
1 bunch celery
2 sweet red peppers
Chop all the above (I use my food processor) and put into a large pot. Cover with vinegar to 1" of top of vegetables and boil for 15 minutes.

Mix together and add:
3 cups sugar
2 tablespoons salt
2 tablespoons dry mustard
1 teaspoon turmeric (optional - mostly for color)
1 cup flour

Boil for a few minutes to blend, put into canning jars and process in a boiling water bath. (I process 8-oz. and 12-oz. jars for 15 minutes.)

Sugar Free Sweet Potato Casserole

1 (18 oz) can sweet potatoes, drained
Brown sugar substitute to equal 1 cup
brown sugar, divided
1/4 cup skim milk
1 egg
1 T. margarine, melted
1 t. vanilla
1 T. flour
1 T. margarine

Mash potatoes until only small lumps remain. Combine the potatoes, three-fourths of the brown sugar substitute, milk, egg, melted margarine, and vanilla. Stir until well blended. Spoon into a shallow baking dish that you have sprayed with cooking spray.

Combine flour and remaining 1/4 of the brown sugar. Cut in 1 T. margarine until mixture is crumbly. ( I like to add 1/2-3/4 cup chopped pecans to this mixture). Sprinkle over the potato mixture and bake at 350 degrees for 35-40 minutes or until thoroughly heated.

These 2 roll recipes are always a hit. Easy to make and light, airy treats. I usually make both for my holiday table.

Soft Wheat Rolls

1 pkg yeast
1 1/3 cup warm milk
1 T sugar
Dissolve yeast in warm milk with sugar.

Stir into above and beat until smooth:
3 Tbs olive oil
1 cup flour
1 tsp salt

Then stir in 2 cups flour (add in 1/2 cup increments) until soft dough forms.
(IF NEEDED add no more than an additional 1/2 cup flour a little at a time)

Cover and let rise in warm place until double, about 45 minutes. Grease muffin tins. Make and place 3 balls in each muffin tin. Brush w/melted butter and sprinkle w/coarse salt.
Let rise 1/2 hour. Bake in a 400 oven 12-15 minutes.


Carrot Rolls

Mix:
3 cups white flour
1 cup whole wheat flour
1 pkg yeast (rapid rise is fine)
1 Tbs sugar
1-1/2 cups warm water
2 Tbs butter, melted
2-1/4 cups grated carrots
1/4 cup chopped fresh parsley
2 tsp each dried rosemary and thyme
2-1/2 tsp salt

After mixing let dough rest 20 minutes. Then knead and let rise 1½ hours. Make rolls and let rise another 1 hour on greased tin. Bake 400 oven 20 minutes. (For each of the kids I usually make small bunny faces w/ears and raisins for the eyes, mouth and nose. They gobble them up.)

This is for Sue regarding her TNT Sugar Cookies, sound so good but it calls for 11 tsp. salt. Is this correct? Seems like an awful lot. Nancy - I am 55 years old and have NEVER (I am ashamed to say) made homemade cake frosting. Does anyone have a TNT chocolate frosting recipe they can share? I tried one using Dream Whip and Sugar Free Chocolate Pudding but would like more chocolate flavor (maybe adding a little cocoa?). Here is that recipe in case somebody is interested.

Use a double recipe for a 13x9 cake.

Sugar Free Frosting

1 envelope Dream whip
1/2 teaspoon vanilla
1/2 cup milk
1 box sugar free chocolate pudding

Blend together milk, vanilla, and dream whip. Beat until stiff. Add pudding mix and continue to beat until light and fluffy. Add milk as needed until desired consistency is reached.

Hi Nancy and All out there. I think Kyra in Florida will enjoy the following margarita pie recipe... wishing you all the success in your fund raiser for cancer research.

Our son in Dallas makes the best margarita I have had anywhere. A friend who tended bar told him to use tequila & triple sec (about 2:1) and a splash of grand marnier. I might try to incorporate a "splash" of grand
marnier in the following: Betty in MS

Margarita Pie ...May chill in refrigerator or freeze

1 9-inch Graham cracker crust
1 (14 oz) can sweetened condensed milk
1/3 cup lime juice concentrate
2-4 tablespoons tequila
2 tablespoons triple sec
1 cup whipping cream, whipped
Extra whipped cream, for garnish
(BJ's note: try 4 tbsp tequila, 1 1/2 tbsp triple sec & 1/2 tbsp grand
marnier in place of tequila & triple sec listed above...I think you
should be very pleased)

Place Graham Cracker crust in refrigerator to chill.

Combine sweetened condensed milk, lime juice concentrate, tequila and triple sec; mix well. Fold in whipped cream.. Pour into pie crust. Chill for two hours in refrigerator until firm, or freeze 4 hours until firm.

I don't know if you have Arrowroot in the US, we have it in Aussie. It thickens with out coloring, cornflour (cornstarch) with leave a white color.
If you can get Arrowroot, you would find it where the cornstarch is. It is a powder like cornflour.

Hope you are all starting to warm up, we are cooling down now.

Chili Sauce Recipe

4 cups tomatoes (I also make this in the winter and use can tomatoes from grocery store)
1 cup chopped bellpepper
2 or 3 hot peppers (chopped)
2 cups chopped onions
1 cup sugar
1 cup white vinegar
1 tsp. salt
1 TBSP pickling spice
small can tomato paste
Mix all ingredients together, cook for 30 minutes .Put in Pints jars ,seal .

Does anyone have a recipe for sour cream lemon pie? It seems like I have asked this before, but if I did, I sure can't find the recipe! Senior moment kind of thing I guess. Had it once at a Mennonite restaurant and it was to die for. Think I might like to make it for Easter dinner along with a coconut cake. If anyone has a really good recipe for one of those, I'd be happy to try it also!

Richard: I lived in New Orleans, La. for 18 1/2 yrs. and I had a friend give me Monkfish and I wanted to know how to prepare it. She told me many ways to cook it but my favorite one was: Tie fish in cheese cloth, drop it in some hot crab boil. The fish takes on that flavor and I made some of the most wonderful crab balls. I had an excess of crab shells and I filled them with seasoned (monkfish) , added eggs, breadcrumbs. Try this and let me know how you like them.

For Barb in La Porte, Indiana this is a delicious corn recipe.

Corn Souffle

2 eggs
2 tablespoons corn starch
2 tablespoons sugar
Salt and pepper to taste
16 oz. can cream style corn
1/2 cup sour cream
1/2 cup milk
With mixer beat eggs until foamy. Beat in remaining ingredients. Pour into sprayed 8 x 8 in. square baking dish.
Bake on center rack of preheated 400 degree oven for 35 minutes or until knife comes out clean in center.

For Dorothy in Texas who has requested a plain bread recipe for a bread machine, I recommend the following. I make this 1 1/2 lb. loaf of bread 1 to 2 times per week and have used it for about 10 years. It is excellent to use as an everyday bread or special enough for serving company. It can be baked in the bread machine OR I prefer to use the DOUGH CYCLE on the bread machine, remove at end of cycle, knead several times, and roll into a rectangular length about 9 x 13 on lightly floured surface, roll and shape into a loaf. Bake in sprayed loaf pan. Take your choice

Plain Bread Recipe

1 1/8 cup tap water (warmed in microwave 30 seconds)
1/3 cup granulated sugar (may reduce slightly)
1 1/2 tsp. salt
3 tablespoon canola oil
3 tablespoon dry milk
2 cups Gold Medal Better for Bread flour
1 cup whole wheat flour (I prefer King Arthur)
2 1/4 teaspoon bread machine yeast

Place water that has been warmed in bread machine, add the oil.
Combine all dry ingredients (EXCEPT yeast) into a bowl and warm 30 seconds on HIGH in microwave. Pour the dry ingredients into the bread machine, In the center of the dry ingredients, add the dry yeast. Do not stir these ingredients in the bread machine.

I program the DOUGH CYCLE which will run 1 1/2 hrs. on my West Bend Bread Maker. Then, I remove, knead on lightly floured surface, roll out and shape into a loaf. Place in sprayed loaf pan. Cover with a damp cloth which has been slightly dampened and warmed 30 seconds on HIGH in the microwave. Allow to rise. Rising time will depend on the temperature of the room. Bake at 350 degrees for 35 min. Butter the top of the loaf, remove onto a rack or cooling rack. Slice. Bread bags are available at King Arthur website on-line. They are perfect for storage.

Have fun with the machine and enjoy! Since there is not a manual with the machine that your granddaughter has, try contacting the company and most likely you will be able to get needed information.
