The purpose of this recipe newsletter is to post requests and replies from our members and to post all their great tried and tested (TNT) recipes.


In the 3/2/10 newsletter Karen asked for suggestions on treats to send a missionary in Ethiopia, based on my experiences in sending packages to our military serving in Iraq and Afghanistan. Homemade treats that I have successfully sent include the following: peanut butter cookies, molasses cookies, oatmeal cookies, chocolate chip cookies, Baby Ruth Bars clone, Ranger cookies, Rice Krispie treats, homemade Tootsie Rolls, Oatrageous Cookies, peanut brittle, Corn Flake Cookies, No Bake Oatmeal Cookies, Cowboy Cookies, and REESES PIECES BARS. In the cold months, it has also worked to send fudge, peanut butter balls (Buckeyes, peanut butter fudge, and other candy with chocolate in it. Snack mixes like Puppy Chow, Chex Mix, White Trash, and granola are other options. I always wrap each cookie or piece of candy in plastic wrap and then place in a zip lock bag.


In addition to homemade treats, I include gum, mints, commercial candy, cookies, and other baked goods. (Oreos, Fig Newtons, Twinkies, Hostess cupcakes, Moon Pies) Popular magazines, beef jerky, instant soups, instant coffee, hot chocolate mix, trail mix, crackers, Pringles, Cheese Curls, Gator Aid mix, packets of sweetened Kool Aid, other drink mixes , plastic jars of peanut butter, raisins, other dried fruit and nuts have also been a big hit.

If sending to a woman, I often include shower gels, shampoo, conditioner and other hygiene products that they will enjoy. My current adopted soldier has a coffee pot and greatly appreciates coffee, especially Hazelnut, as well as creamer and Splenda. If microwaves are available microwave popcorn is also a great item to send. Girl Scout cookies and the tins of popcorn that the Boy Scouts sell are also quickly devoured. The post office has 2 sizes of boxes that you can get for free. You can fill each box full and ship for a flat rate, regardless of how much it weighs.

I eventually got it installed, then had to get the fellow that works on our computer to help me get your recipes imported to it, have enjoyed looking over your recipes, will be trying some as soon as possible.

Robbie IN, thank you so much for keeping my military son, Todd, in your prayers. We heard that he has arrived at the place, high on a mountain, where his unit will be stationed. He said it is a very beautiful place, which surprised me. I guess we are a military family in a way. My DH served in the Army, second son in the Air Force and now youngest in the Army. I am trying to think of things to send because this location doesn't have a PX and everything must be shipped in. I enjoy making up interesting boxes for him, so any ideas will be appreciated.

I remember reading a recipe for Polish Cabbage Soup and I was sure it was on Nancy's Kitchen, but I check the recipe index's and I can't find it. Can someone help me on this?

Here is a good recipe to make for St. Patrick's Day. I usually make it then, and also at Christmas time, or anytime during the year, when we
get hungry for it.

Pistachio Sour Cream Bread

*1 pkg. Duncan Hines Butter Recipe cake mix
1 pkg. (3.4 oz.) pistachio instant pudding
1 cup dairy sour cream
1/4 cup cooking oil
3 tbsp. brown sugar
3/4 cup chopped walnuts
4 eggs, lightly beaten
1/4 cup water
2-1/2 tsp. cinnamon

In bowl for an electric mixer, combine cake mix, pudding, oil, water, sour cream and eggs. Beat until smooth on medium speed. In a small bowl, toss together brown sugar, cinnamon and nuts. Divide batter between 2 well greased and floured 9 x 5 inch loaf pans, alternating layers of batter with sugar-nut mixture, ending with sugar-nut mixture. Bake at 350º for about 1 hour, or till tests done. Cool a few minutes; remove
from pans, and let cool completely before slicing.

*Could probably use a yellow cake mix, without pudding added to it.

I fixed something for supper yesterday, that hadn't made in quite some time. I forgot just how easy and good it is. Excellent way to prepare
meat, if you are going to be away from home all day.

Workperson's Roast

1 beef roast (can even be a cheap cut)
1/2 pkg. dry soup mix (I use beefy onion)
2 tbsp. Worcestershire sauce
1 can cream soup (I like cream of chicken)
slivered fresh garlic
1/2 soup can water
seasoned pepper, to taste

Place roast in center of large sheet of foil; cut slits in roast and push slivers of garlic into them (the more the better). Sprinkle with seasoned pepper. Pour cream soup over meat; pour Worcestershire sauce over soup. Sprinkle with dry soup. Pour water in bottom of foil and seal around meat, leaving space around and above roast. Bake at 250º for about 10 hours, until fork tender. Thicken the juices for the best gravy in the world! Serve gravy over mashed potatoes, or rice.

Note: I usually fix this in my Crock Pot, and let it cook on low all
day.

Nancy, JL in South Jersey posted a recipe for Crab Meat Quiche in the Tuesday, 3/2/2010 Newsletter. JL, in your post the directions say, in part, "Pour into or 8 inch pastry shell". I have to ask two questions: (1) Pour into ? what? (2) If using the pastry shell, should it be pre baked or used unbaked? The recipe sounds like a "Keeper", but I need clarification of the two issues. Thank you for posting the recipe.

This is about the soft peanut butter cookies sent in by Sandra. There is no mention of any flour. Is this correct?

Just thought I had better add a comment to the peanut butter cookie recipe I sent in yesterday. The recipe is correct. There is no flour in this recipe and it tastes almost truffle like. The cookie almost melts in your mouth.

One note on the Éclair Pudding Cake I made and took to shuffleboard yesterday, most who tried it said it would be best with more graham crackers and no frosting. It just might, too! The pudding cake itself is very light and not filling alone; and it is just right when it is warm outside! Chris in NM

Crab Sandwiches with Herbs

1 lb. lump crabmeat
2 Tbs. plus 2 tsp. mayonnaise
2 tsp. fresh parsley, minced
2 tsp. fresh tarragon, minced - I did not use
1 Tbs. plus 1 tsp. scallions, minced
1/4 lb. light cream cheese
2 eggs, beaten
3/4 tsp. Dijon mustard
4 English muffins, split and toasted
4 slices tomato
Combine first 5 ingredients in a bowl. Combine cream cheese, eggs, and mustard in another bowl and beat until thoroughly mixed. Spread crab mixture over English muffins. Spread cream cheese mixture on top, and broil muffins 3 minutes 6 inches from heat source. Add tomato slices and broil another 2 minutes. Per serving: calories 391, fat 14.6g, 34% calories from fat, cholesterol 210mg, protein 33.9g, carbohydrates 29.0g, fiber 1.9g, sugar 3.9g, sodium 792mg, diet points 9.2. 4 servings posted by Marilynn

Crab Lasagna

1 medium onion, chopped
1 (8 oz.) can sliced mushrooms, drained
2 cloves garlic, chopped
2 (15 oz.) cans tomato sauce
2 Tbsp. parsley, chopped
1 tsp. dill weed, chopped
1/2 tsp. dried oregano leaves
1/4 tsp. dried basil leaves
1 (7 oz.) cans crabmeat, drained and flaked
10 to 12 lasagna noodles, cooked
1 to 2 cups sour creams (cups according to desired richness)
1 to 2 cups Mozzarella cheese, shredded (also according to desired richness)
2 to 4 cups Cheddar cheese (also according to desired richness)

Melt butter. Add onion, mushrooms and garlic; cook until tender. Stir in tomato sauce, parsley, dill weed, oregano and basil. cover and simmer for 20 minutes. Stir in crabmeat; remove from heat.

Cook noodles and drain. Arrange 1/2 cooked noodles in bottom of large flat bottomed 10 x 14 x 2 inch pan. Pour 1/2 of sauce over noodles. Spread 1/2 of sour cream over sauce. Sprinkle 1/2 of both cheeses over sour cream; repeat layers. Bake at 350 for 1 hour. Let stand for 5 to 10 minutes out of oven before cutting into squares.

I would like to thank Laurine in NNY for the recipe for the Éclair Cake. My niece in Georgia was looking for the recipe. The only ingredient missing was the condensed milk. I am sure she can add this to the mix.

I'm looking for a TNT BBQ sauce recipe that does not have vinegar in it. If anybody could help me with this, I'd greatly appreciate it!

I'm also looking for a recipe for parmesan knots made from scratch. All I remember is that the recipe had yeast, flour, and parmesan cheese in it (not much help I know!).

Erma in Jacksonville, Fla was looking for Eclair Trifle, unless you experiment there this no recipes for an Eclair Trifle. but here is a recipe I received from an online friend about 10-15 years ago that may help you.

Napoleon Trifle

1 (17 1/4 ounce) package frozen puff pastry, thawed
1 small box instant vanilla pudding and pie filling (I would use 2 boxes)
1 1/2 cups milk
1 (12 ounce) frozen whipped topping, thawed *
1/2 cup chocolate flavor syrup

Unfold the puff pastry and place each sheet on a baking sheet. Bake according to the package directions until golden. Allow the pastry to cool.

In a large bowl, whisk the pudding mix and milk until thickened. Stir in half of the whipped topping until thoroughly mixed.

Break the cooled pastry into large pieces and place one third of them in the bottom of a large glass bowl or trifle dish. Spoon half of the pudding mixture over that and drizzle with one third of the chocolate syrup. Repeat the layers then top with the remaining broken-up pastry, the whipped topping, and the remaining chocolate syrup. Cover and chill for at least 2 hours before serving.

* For extra-rich flavor and texture, whip a pint of heavy cream and use instead of whipped topping.

Pineapple Macadamia Nut Bread

1 cup sugar
1/2 cup oil
4 eggs
3/4 cup pineapple juice
1/2 cup crushed pineapple & juice
3 cups flour
1 Tbs. baking powder
1 tsp. salt
1/2 cup macadamia nuts

Combine ingredients. Pour into greased loaf pan. Bake at 350° for 50-55 minutes.

These are much healthier than the store bought varieties.

Granola Bars

Mix:
1 2/3 cups quick rolled oats
Another - 1/3 cup oats, processed finely
1/4 cup sugar*
1/2 tsp salt
1/4 tsp cinnamon
2-3 cups dried fruits and nuts

Mix and add to above:
1/3 cup peanut butter
6 Tbs melted butter
1/4 cup honey, maple syrup
2 T light corn syrup
1 T water

*(u may want up to another 1/4 cup sugar depending on your taste. I think it is sweet enough with all the other sugary ingredients)

Line a 9' pan with foil or parchment to overlap. Grease it thoroughly.
Bake 350 30-40 minutes. After cooling, lift hanging tabs and remove from pan. Cut into desired size squares.

Regarding the Potato Soup recipe submitted by Mr. Myron Drinkwater - I have tried this recipe and it is good. Don't be fooled (as I was) into thinking the hash browns are not enough and add more - they swell and will make plenty - trust me - I had to dip a bunch of mine out and throw them away! LOL :)

Easy Eclair Dessert

27 whole graham crackers
2 cups cold milk
2 packages (4-serving size) Jell-O vanilla instant pudding
1 (12 oz.) tub Cool Whip
1 (16 oz.) container ready to spread chocolate frosting
Whole Strawberries for garnish (optional)

Arrange 1/3 of the crackers on bottom of 13" x 9" baking pan, breaking graham crackers if necessary. Pour milk into large bowl. Add pudding mixes. Bet with wire whisk about 2 minutes. Gently stir in Cool Whip. Spread 1/2 of the pudding mixture over crackers. Place 1/2 of the remaining crackers over pudding. Top with remaining pudding mixture and crackers. Remove top from frosting container. Microwave frosting in container on High for 1 minute or until pourable. Spread evenly over crackers. Refrigerate 4 hours or overnight. Garnish with whole strawberries if using.
