The tiny "cupcake" liners are probably used for making candy, i.e., chocolate covered nuts. I have purchased these at candy-making supply stores.

Here is a Good & Easy Tried & True Recipe which was published in the Buffalo News many years ago.

Chicken (or Vegetable) Stroganoff

3 tablespoons butter
1 + 1/2 cups fresh mushrooms
1 medium onion - diced
2 10 oz. cans of Cream of Mushroom Soup
2 cans of water
1 10 oz. package Egg Noodles
1 8 oz. container of Sour Cream
(2 10 oz. cans of white chicken) or vegetables ....this is optional
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon parsley flakes
1/4 teaspoon garlic powder
Heat butter in a large skillet and saute mushrooms and onions for 4 to 5 minutes, until tender. Add soup and water and bring to a boil. Add egg noodles and cook until done (about 8 minutes). Stir in sour cream and seasonings and mix well. Stir in chicken (or vegetables). Reduce heat and simmer for 5 minutes, stirring constantly.

I am looking for a TNT peanut butter cookie recipe, that is soft, and almost like a "melt in your mouth" sugar cookie, but also has peanut butter in it. Anyone have one---? It is very light and flaky, not like the usual heavy, crunchy, peanut butter cookies.

Chris in NM, regarding the Amish Chicken Noodle Soup recipe you posted on 2/27, you listed 2 qts. water, per the recipe, but you said you used only 1/2 c. for a 3 lb. chicken. Is this correct?

1/2 c. doesn't seem like enough liquid to make a broth.

Nancy and all the "family" here,
My Landlady has developed an "allergy" to gluten (has a deficiency of Vit D, too). Does anyone have a site for "gluten free" items and recipes?? I know thing's have been "shared" here, but now I'm at a loss. Any help would be greatly appreciated !!!

BTW, my cat, Chewie say's "meow" to your "furry kids", Nancy ....LOL..... :)

To the recipient of the muffin liners that turned out to be less than what they expected. ..How disappointing! If they are the mini muffin liners, just reserve using them for holiday or special events that would warrant your serving smaller size muffins. Breakfast mini muffins could come in handy for an unexpected visitor to have with coffee or tea. Corn muffins could be made and frozen to use whenever you're serving a small meal or having a variety of breads. Perhaps, nuts or pieces of candy could fit nicely into the liners. Cheesecakes "bites" might be an option.

If you find they're absolutely too small to be useful with food items, then find a craft use. Elementary teachers could surely find a use for them in crafts. With spring just around the corner, perhaps, they might fit into the making of spring flowers, borders for bulletin boards, etc. Other places such as churches, vacation Bible school in the summer, nursing home activities, day care activities may find them to be a real treat to have for craft projects. Do a SEARCH on the web for uses of these tiny liners if you think they're too small of any of the ideas mentioned.

When making cupcakes this recipe is a great addition. Kids and adults love the surprise.

Macaroon Filling

1 8 oz cream cheese
1/4 cup sugar
1/2 cup nuts (optional)
1/2 cup coconut

Pour 2 tbs cupcake batter in a cupcake tin. Top with 2 tbs macaroon filling. Top with another 2-3 tbs of batter to fill 3/4 way up each well. Bake according to cupcake recipe. Cool and frost with Cool Whip.

Does anyone have a recipe for Éclair in a bowl dessert recipe? It has vanilla pudding, milk, cool whip and condensed milk. Graham crackers are used for crust. Has heated chocolate icing for the topping.

For CAMILLE, Commack, L.I.,NY: It is always disappointing when we order something and anxiously await for it to get to us and when it does arrive, it is not what we thought we were getting. It has happened to me many times.

Now, what can you use your small cup liners for. Try making peanut butter cups. They should be the perfect size. This is a suggestion, if the company does not take them back. Good luck on returning them (postage will probably cost you as much as you paid for them).

Re: Lisa's Hawaiian Pork Roast. Having been to Hawaii many times and going to many Luau's where I ate Kalua luau pig, I can almost taste Lisa's Hawaiian Pork Roast as being an indoor clone of the one made in Hawaii outside in the pits. I make one in my oven that taste identical to it and is so delicious. Plan to make Lisa's recipe as soon as one of my local stores has a sale on Boston Butt.

For Doris W, Indiana. Your son and you will be in my prayers for a safe tour of duty. Please, when you write or talk to him, will you tell him "Thank You for serving Our Country!" For him I will pray for a safe return back home after his service there.

This is for Doris SW IN; I will definitely keep your son and the members of his company in my thoughts and prayers, as they are deployed to Afghanistan. We are a military family. My husband did 20 years in the navy and our youngest son did tours in Iraq and Afghanistan and is now full-time National Guard. We know the range of emotions that you and your family are experiencing at this challenging time. If this is his first deployment and you need suggestions on items to include in the treat boxes that you send him, just let us know. I mail a box monthly to my adopted soldier and know that other readers do the same for their friends and family that are serving our country.

Pizza Dough Seasoning

With all the talk about pizza dough in our group lately, I'm passing along the dough seasoning list I found in a friend's recipe book 20 years ago. These herbs/seasonings added to the flour when making the dough add pleasing flavor to the finished product.

1 tsp dry basil
1 tsp marjoram
1/2 tsp garlic powder
1/2 tsp onion powder

For Camille, Commack, L.I.,Ny -- I've been using "SAF-instant" yeast in the one-pound package for many years with excellent results. I've made all our bread products including breads, rolls, English muffins pizza and dessert breads since 1972. Started out using a bread pail that mixed many loaves at a time when there were five of us (the kind where you turn the handle on top) and now that there are only two of us and I have arthritis in both hands I happily use a Cuisinart.

Asparagus Five Can Casserole

1 can (16 oz.) mini early peas, drained
1 can (15 oz.) asparagus, drained OR (1 lb. cleaned, drained, fresh)
1 6 oz. can water chestnuts, drained and sliced
1 can cream of mushroom soup, undiluted
1/2 cup grated cheddar cheese
1 can (3 oz.) french fried onion rings

Layer the peas, asparagus and water chestnuts in a greased casserole dish. Sprinkle the cheese on top. Spoon over the soup. Top with onion rings. Bake at 350° for 15-20 minutes.

I have served this on crusty French bread and used the Au Jus as a dip, serve with a salad makes a great meal.

Roast Beef Au Jus

4 pound beef tip or top round roast
Seasoning salt and pepper
Au Jus (See below)

Place roast on rack in shallow roasting pan. Season with salt and pepper. Insert meat thermometer into center of thickest muscle, not resting in fat. Do not add water. Do not cover. Roast in 325° oven for 20 to 25 minutes per pound or until meat thermometer reads 135° to 140°. Remove roast, tent with foil and let stand 15 minutes in warm place. Prepare Au Jus. Slice roast, across the grain, into thin slices. Place slices in serving dish and cover with hot Au Jus. Keep warm (at least 140°) in chafing dish or slow cooker for serving. Serve as sliced beef or on a bun with Au Jus as a French Dip.

Au Jus

2 cups beef broth or bouillon
1/3 cup brown sugar
1/4 tsp. Lawry's seasoning salt
1/2 tsp. Liquid Smoke
1/4 cup reduced sodium soy sauce
1 can (4 ounces) sliced mushrooms and juice

Combine all ingredients and heat to boiling. Stir until sugar dissolves

Chocolate Chess Pie Recipe

I have been making this pie for many years. Anyone who likes chocolate will likes this pie.

1-1/2-cups sugar
3-eggs
3/4-cup margarine
1-1/2-squares unsweetened chocolate
1/4-tspn salt
2-tspn vanilla

Combine sugar and eggs, beat well. Melt margarine and chocolate in a saucepan. Add chocolate to sugar and eggs. Add salt and vanilla, mixing well. Pour into 9-inch pie crust and bake at 325 degrees for 30 minutes. Serve warm topped with a dollop of Cool Whip.

Italian Sausage Spaghetti Sauce

2 tablespoons olive oil
1/4 cup butter
2 (1 pound 13 ounce) cans tomato sauce
1 medium onion, chopped
1/4 cup beef broth
2 cloves garlic, crushed
12 mushrooms, sliced thick
5 mild Italian sausage links
1 1/2 pound ground beef
1 tablespoon Italian seasoning
1 tablespoon oregano
1 tablespoon Worcestershire
1 tablespoon parsley
1 small can diced olives

Heat and melt olive oil and butter. Saute onions, garlic and mushrooms. Add hamburger. Slit skin on sausage and discard skin. Add sausage. Cook until brown. Drain. Add all other ingredients and cook at least 1 hour but preferably 3 hours.
Serves 4.

Chicken Fried Rice

2 c. diced cooked chicken
2 c. sliced green onion
1/4 lb. mushrooms, sliced
3 tbsp. peanut oil
3 c. cooked rice
3 tbsp. soy sauce
1/2 tsp. sugar
1/4 tsp. ground ginger

In large Wok, cook chicken, onions and mushrooms in oil over high heat, stirring constantly for 5 minutes or until mushrooms are golden. Add remaining ingredients and cook 3 minutes longer until heated through and well blended.
