My Mama's Coconut Cake
1 cup butter
2 cups sugar
5 eggs
3 cups sifted flour
1 Tablespoon baking powder
1-1/4 cups milk
1 teaspoon vanilla
Beat butter in a bowl until creamy. Add sugar, beating until
light and fluffy. Add eggs and beat well. Blend flour and
baking powder in a bowl. Add to batter alternating with milk
beating after each addition. Stir in vanilla. Divide batter
among 3 greased and floured 9" inch round cake pans. Bake
layers at 350° degrees for 25 minutes. Cool cakes in the
pans, remove and frost with coconut icing and coconut.
Coconut Icing
1/2 cup butter, softened
1 (3 oz.) package cream cheese
1 (16 oz.) package powdered sugar
1/4 cup cream of coconut milk
1 teaspoon vanilla
1 package sweetened flaked coconut
Beat butter and cream cheese at medium speed with an
electric mixer until creamy. Gradually add powdered sugar
beating at low speed until blended. Increase speed to medium
and slowly add milk and vanilla beating until smooth. Frost
the cake then sprinkle sweetened flaked coconut all over
cake or you can fold in the sweetened flaked coconut in the
mix if you desire.
