This is a
delicious light dessert, that is perfect
for Easter. I got the recipe off a box
of Girl Scout plain shortbread cookies
(butter flavored wafers) years ago, and
has been popular through the years at
our house.
Girl Scout Lemon Fluff
1 can (13 oz.) evaporated milk
1 pkg. (3 oz.) lemon Jell-O
1-3/4 cups boiling water
1/4 cup lemon juice (not from a bottle)
1/2 cup sugar
2-1/2 cups finely crushed plain Girl
Scout cookies
(you can also use vanilla wafers from
the store)
Chill can of milk for 3 to 4 hours.
Dissolve Jell-O in boiling water. Chill
until partially set. Whip until light
and fluffy, Adding lemon juice and
sugar. Whip chilled milk and fold into
the Jell-O mixture. Line bottom of a 9 x
13 inch pan with half the cookie crumbs.
Pour mixture over crumbs. Top with
remaining crumbs. Chill until firm. Cut
into 12 squares. Center with a
maraschino cherry, if desired.
