Hi Nancy, Mary in Norfolk requested recipes for gluten free
foods. I have a friend with this same disorder and have
collected recipes for her over a period of time. Here is one
I think you will enjoy Mary. Betty in MS
Flourless Peanut Butter Cookies
These gluten-free peanut-butter cookies are excellent. Makes
10 to 12 cookies
1 cup creamy peanut butter
1 cup granulated sugar plus additional for rolling
1 teaspoon baking powder
1 egg
Preheat oven to 350°F. Line baking sheet with parchment.
Beat the peanut butter and 1 cup sugar by hand in a bowl.
Stir in the baking powder and egg. Mix until well-combined.
(The dough will be sticky.) Roll the dough into balls. Roll
balls in additional sugar. Arrange on baking sheet. Bake 10
minutes or until slightly soft. Cool cookies on tray on rack
5 minutes, then carefully transfer them to racks to cool.
PER COOKIE: 197 calories; 6 g protein; 21 g carbohydrates; 1
g fiber; 11 g fat (2 g saturated); 18 mg cholesterol; 144 mg
sodium
