I have a recipe for banana bread with cake mix that turns out well every time. I tried the one with instant pudding and didn't like the results either.

Banana Bread with Cake Mix

1 (18.25 ounce) box yellow cake mix (without pudding)
(I use store brand yellow cake mix)
3 eggs
1/3 cup oil or applesauce
4 ripe bananas
1 cup chopped walnuts

Preheat oven to 350 degrees.
Mix mashed bananas with eggs, oil, cake mix and nuts in Kitchen Aid or with hand mixer. Pour into greased bundt pan and bake for approximately 45 minutes or until browned. Remove from oven and let cool ten minutes, then invert to wire rack to cool completely. Can be baked in two greased loaf pans for 30 to 35 minutes or makes about 24 cupcakes.
