Watermelon Rind Pickles
6 cups watermelon rinds, peeled and
scraped
2 cups vinegar
2 cups water
4 cups sugar
1 stick cinnamon
1 tsp. whole cloves
1 tsp. whole allspice
1 lemon, sliced thin
Cut rinds into cubes; soak in water
overnight. Wash and drain. Boil rinds
until tender. Combine ingredients and
boil for 5 minutes. Add rind, a few
pieces at a time, cook until rind is
clear. Pack in hot, sterilized jars.
Pour syrup on top. Seal jars.
