Orange Fruit Scones
Stir together:
2 cups flour
1 tbs baking powder
4 tbs sugar
Zest of one orange
Rub in:
6 tbsp cold butter, cut into cubes
Add:
1/2 cup craisins, raisins or any dried fruit
1/2 cup nuts
Add:
2 beaten eggs in 3/4 cup cold milk
Pat all together on a floured counter about 1 1/2"-2 " high
and cut into squares, triangles or rounds with knife or
cookie cutter. Place on a sprayed cookie sheet or parchment
paper. I made 6 large scones.
Bake 400 oven for about 15 minutes.
The less you handle the dough the lighter the scones bake
up. I made mine with chopped dried figs and they were
fabulous.
