My niece was being home schooled a few years ago and I was elected to teach her home economics class. To make a long story short, she wanted to make Orange Chicken like Panda Express. We came up with this recipe. We liked it a lot. Hope you do too. Pat So Cal

Orange Chicken

2 chicken breasts, boneless and skinless
1/4 teaspoon salt
2 tablespoons dark soy sauce
1 tablespoon cornstarch
Oil for deep-frying
2 tablespoons sesame seed oil
1-2 tablespoons orange juice concentrate, undiluted
2 tablespoons scallions, chopped fine
1 tablespoon ginger, chopped fine
1 clove garlic (minced)
2 whole dried red chili peppers, cut into fourths
4 1/2 teaspoons sherry
1 teaspoon red wine vinegar
2 1/4 teaspoons sugar

Sprinkle chicken with salt. Mix the chicken with 1 tablespoon soy sauce and cornstarch. Heat oil to 400°F. Deep fry chicken 1 minute. Drain. Remove chicken and oil from wok.

Heat sesame seed oil to 375°F in wok. Stir-fry the scallion, ginger, garlic and chili peppers 1 minute. Add the sherry and orange juice concentrate, 1 tablespoon soy sauce, wine vinegar and sugar. Cook 2 to 3 minutes. Add chicken. Stir-fry 2 minutes on high heat.
Serve with fried rice.
