About a week ago there was a request for a Key Lime Pie using evaporated milk. I did not save the name of the individual requesting this recipe, as I did not think that I had it. However, in reviewing my files I found this recipe that came from a January 2008 newsletter. I regret I don’t know who originally submitted the recipe. I hope this helps. I, as well as many other readers have recipes for Key Lime Pie that use lime yogurt and ones that use sweetened condensed milk.

Lime Pie

1-1/4 c. applesauce
1 (3 oz.) pkg. lime gelatin
1 tsp. lime juice
1 baked pie shell
1/2 c. sugar
1 c. evaporated milk, whipped
1 tsp. lemon juice

Heat the applesauce, add gelatin and sugar. Dissolve and cool. Add evaporated milk, whipped. Pour into baked pie shell and chill.

Variation: Cool Whip may be substituted for the evaporated milk.
