Another heart healthy addition to our New Year of eating nutritiously.

Feta Scones (Low Fat/Calorie)

Whisk together:
2 cups white flour
1/2 cup whole wheat flour
1 tbs + 2 tsp baking powder
1/2 tsp salt

Add and gently mix with a fork:
4 oz feta cheese, crumbled
4 oz chive flavored cream cheese, I nuke it a few seconds to soften

Gently stir in 1 cup milk mixed with 1 egg

If dough is too sticky you may add (up to) an additional 1/2 cup more flour.

On a floured surface form dough in a circle about 1" high and section into 8-12 wedges.

Optional: Egg Glaze
Beat well with a fork 1 egg & 2 Tbsp. milk

Bake in a 400 oven for 20-25 minutes or until golden.

The key to tender scones are to handle the dough with a light touch and as little as possible. The flavored cream cheese in this recipe really makes it pop. Also, these freeze well. However, mine never get to visit the interior of my freezer. They like resting in my tummy better. Enjoy!
