Dad's Favorite Coffee Cake
Use a bundt pan or springform pan with a
very large center opening or it just
won't come out right .
Mix together & beat in large bowl:
1 cup sugar
1/4 cup butter
add & mix in:
2 beaten eggs
Add:
1 cup milk
1 level tsp. vanilla
mix together. & add:
1 tsp. baking powder-scant -just level
it
1 tsp. baking soda-scant
1/4 tsp. salt
2 cups flour
Mix the above well.
In a separate bowl, combine:
1 tsp. cinnamon
1/4 cup chopped walnuts or pecans, your
preference
1/4 cup brown sugar
Pour half of the batter in a large ring
bundt pan or springform pan with large
center ring.
Take 1/2 of the cinnamon/sugar/nut mix
and sprinkle on the top .
Pour in rest of the batter.
Sprinkle rest of sugar mixture over the
top.
Bake at 350 degrees for 50 to 60 minutes
or until a toothpick comes out clean.
Drizzle your own glaze over the cooled
coffee cake or use this one:
1/4 cup or 4 TBLs. butter melted in
microwave
sift 2 cups powdered sugar into a medium
bowl
Add the melted butter
add 2 TBls. milk
You can add 1/4 tsp. of almond extract
or 1/2 tsp. of vanilla for
flavor.
Beat until smooth and creamy adding a
little more milk if necessary
