Hi Everyone. Hope everyone had a fun filled New Year's Eve. Here are a few healthier recipes that are TNT.

Eggs Benedict

Mock Hollandaise Sauce. See below
1 egg, (I use Eggland's Best)
1/2 whole wheat lite English muffin
1 to 2 slices lean Canadian bacon (about 2 oz.)

Prepare Mock Hollandaise Sauce
4 oz. fat free cream cheese
3 tablespoons plain nonfat yogurt
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard

Process all ingredients in blender or food processor until smooth. Heat in small saucepan over medium heat until hot. Makes about 3/4 cup sauce. I use this amount for four of the eggs benedicts.

Poach egg to doneness desired. I like mine med well. Toast muffin. Top muffin with Canadian bacon and one egg. Spoon sauce over egg. Yum.

Variations:
1. Add baby spinach as an additional layer on the muffin.
2. Add a slice of ripe tomato
3. Spread one wedge of Light Laughing Cow Cheese or other lite cheese spread on muffin before adding other layers.
