Cheesy Vegetable Soup

3 cans chicken broth ( I used Swansons, one can of Reg. one can of Roasted Garlic and
one can of Italian herbs, this gives it a really good flavor)
2 pkgs. Calif. Medley (I used 1 pkg of broccoli florets and 1 pkg. of California medley
1 can Rotel tomatoes
10 oz. Velveeta Light @ room temp.

Place broth, tomatoes and veggies in pot. Heat on medium until hot and then simmer until veggies
are tender. Add cheese.
I make this a lot and I love it. I like to steam each package of veggies in the microwave for about 8 min. each until very tender. I also put my veggies in a small food processor for a couple of minutes to chop them
up finer and then when I added the broth and tomatoes and cheese it only took a few minutes and
was very tasty.
