The purpose of this recipe newsletter is to post requests and replies from our members and to post all their great tried and tested (TNT) recipes.


When I saw the note about someone wanting to plant potatoes, I had to pass this along. Many years ago my sister had a small bag of garbage including potato peelings, with eyes starting to grow. For some strange reason she decided to bury the garbage in her back yard. She could not figure out how she ended up with potato plants growing there till someone explained it to her.

Another bit of info, while doing a search a few days ago, I came across a site some of your readers might want to check out. It is amishrecipes.net. Looks interesting.

This is for Duffy who wanted a recipe for BBQ chicken sandwiches. This is not a BBQ style, but one my family
likes. You could finish this in a slow cooker after sautéing the onions and celery.

Shredded Chicken Sandwiches

1 Tbs. butter
1 onion, diced
1 stalk celery, chopped
1 cup chicken broth
3 boneless, skinless chicken breast halves
1 Tbs. cornstarch
1/2 cup milk
salt and pepper to taste.

Melt butter in a saucepan and sauté onions, celery and 1 Tsp. chicken broth. Continue to sauté for 5 minutes. Add chicken and remaining broth. ( At this time you could add this mixture to a slow cooker and cook until chicken is very tender.) Otherwise, simmer on stove until chicken is tender.

Remove chicken from pan (or slow cooker) and allow to cool until it is easily handled.

Shred chicken, return to pan (slow cooker) and bring to a simmer. Combine cornstarch and milk in a small bowl. Slowly add to chicken mixture, simmering 5 minutes. Continue to simmer and shred chicken until mixture has thickened but still moist, approximately 8-10 minutes. Season with salt an pepper.
Makes 5-6 sandwiches.

Note: I think you might use a little water (instead of the milk) to make a paste of the cornstarch and after mixing into the chicken mixture you could add a 1/2 cup or so of a BBQ sauce of your choice.

Marianne Hansen Meridian, Idaho Feb 5 Newsletter: Heart Attack Fudge
I would like to try this recipe this next week for Valentine co-heart gifts. Would you clarify the size can of evaporated milk? Also, I assume a cube of butter is a stick of butter. I am not sure of the comment at the bottom about time. I assume the 6 minute is to use the recipe for a fudge sauce. If I am going to use a heart to cut-out the fudge, do I need to use the 10 minute time. Thank you so much for clarifying this for me.

Greetings to all, I have been entertaining myself by trying out recipes from Nancy's while the weather is so wintery. Yesterday I made the Applesauce Cookies #2 recipe from June/Mo and they are very tasty. The only problem is I can't go thru the kitchen without grabbing one. LOL

Also made Stuffed Peppers that I believe Heather sent in. They turned out well but my DH commented they weren't quite as spicy as he expected. So, I went back and checked the recipe. Lo and behold, I had made an assumption and didn't read the recipe correctly. Fortunately, the recipe made four filled peppers and I had only served him two. So with the other two, I completed the process and they were very good. Sometimes when I think I know how to make something, I don't thoroughly read the recipe. It was a good learning experience and fortunately not a waste.

I'm sure none of you ever do that? :) One of the things I love about the Newsletter is, it gets me out of my rut of cooking the same things. Hearing from such a wide range of geographical areas gives a wonderful variety of recipes. I hope everyone is keeping warm and my sympathies to those who are in the Eastern part of the country with so much snow and power outages.

This is in response to Sue, she did not say where she was from. She wanted to know where to get the Reynolds vacuum bags. The only place that I am aware of for now is HSN. They are sold by Debbie Meyer as Genius Vac Bags. You can look at the HSN web site. Hope this helps.

I had found a site last fall that sold those Reynolds Vacu-seal bags in large quantities. I never ordered any but they sold bulk quantities. I've hunted all thru my hard drive for the file that contained the website but so far can't find it.

Do a search with terms like "large quantities" or 'bulk'. That may work. Meanwhile if I find it, I'll send it.

I put cooked rice ( I have used white & Cajun both) in the bottom of the peppers (cored). Then I add browned ground beef, seasoned anyway you like, with spaghetti sauce, like you were making spaghetti sauce. Then I top it with shredded cheese. Your ready to bake or freeze. I buy the disposable loaf pans (the small ones will hold 3 peppers). I cook & freeze in these. hope you enjoy!

Reynolds no longer makes the bags for the Vacu-seal hand tool. As soon as I discovered this I ran to the store and purchased all they had in stock. I had seen some on Ebay for sale, you might try there. I also loved them and have a ruler in hand for anyone touching my Vacu-seal bags.

I have a question for everyone. Does anyone remember Velveeta cheese coming in a red box with pimentos in it? When I was young you could get the red box or the plain in a yellow box. I loved making grilled cheese with the pimento. We can no longer get it here, I wondered if any other part of the country still had it available. Some times items are regional. I tried to email Kraft but didn't get any reply.

I moved from the UK and now live in Alabama. My previously beautiful light and crispy Yorkshire Puddings have disappeared and been replaced by flat, chewy puds. How on earth can I get my Yorkies to rise again?

I just finished reading the recipe "heart attack fudge " in the news letter Fri/05/02/2010 from Marianne Hansen in Idaho It sounds just about right to cure winter doldrums ,but I'm not sure how much 2 cubes of butter are ?perhaps we could get that converted to cups please?

Just bought a Ninja and only used it twice but like it. Would appreciate some recipes and tips for using it. On the commercial saw were they made ice cream and would really like to try it but can't find any recipe for it.

I want to share this cake recipe that is so good. It's made from a Duncan Hines Spice cake mix. The mix had been in the fridge for a very long time. Wasn't sure it would be good, but happened to remember a tip given by my cousin for an "old" cake mix. When you are mixing the cake per the instructions, add 1 tsp. baking powder. The cake turned out beautifully and is very tasty. The recipe is actually from the side of the box. It's really good; can hardly stay away from it.

Hi Nancy, since everyone has had their share of cold weather, here’s a quick crock-pot version of vegetable beef soup. I know another member has said she doesn’t have much time for dinner, and I can relate well, so I thought I’d share this time-saving recipe that is very good.

Crock-pot Vegetable Beef Soup

Small roast – arm roast or any roast will do, cut up in small pieces

1 can green beans (do not drain)
1 can corn (do not drain)
1 can peas (do not drain)
1 can Del Monte Italian style stewed tomatoes (I cut them up)

small package of baby carrots
2 bay leaves
2 beef bullion cubes
garlic to taste (I used fresh minced)
salt and pepper to taste

Can add other vegetables if you choose (I added 3 potatoes with skin on).

Add all to Crock-pot and cook on high for 3 hours, then turn to low and continue cooking until baby carrots are tender. I have cooked on low for 8 hours while at work with success as well.

Good morning. Just to let you know, I did make some chicken bog. To me it was almost like a chicken casserole. It made a lot. What i did do was take some and add chicken broth to it and made a soup as it contain chicken, rice, and sausage. Would i make it again, not really for it seem to be lacking something. Any suggestions? Thanks Nancy for a great newsletter.

Broccoli Salad

In a bowl mix:
2 slices chopped cooked bacon
4 cups raw broccoli florets
1/4 cup chopped celery (2 small stalks)
1/4 cup chopped red onion
1/4 cup raisins
1/4 cup mayonnaise
2 tbs sour cream
1 tbs white vinegar
1 tbs sugar
S/P

Cover bowl with plastic wrap. Refrigerate and let marinate at least 2 hours.

For the Olympics:

Gold Winner Goulash

1 slice bread
1/4 c. milk
1 lb. ground beef
1 egg
1 T. chopped parsley
1/2 t. salt
1 T cooking oil
2 large onions, sliced
1/4 c. flour
1 T. paprika
Generous dash ground cloves
2 c. beef broth
1 bay leaf
8 oz. egg noodles

Dip bread in milk; crumble & mix well w/meat, egg, parsley & salt; shape into 12 balls. In large skillet, brown meatballs in oil; remove & set aside.

Lightly brown onions in drippings. Remove from heat; blend in flour, paprika and cloves. Add beef broth & bay leaf; bring to boil, stirring until
smooth & slightly thickened. Return meatballs; cover & simmer 30 min.; remove bay leaf.

Meanwhile cook noodles as directed on pkg.; drain. Serve meatballs & sauce over noodles.
4-6 servings.

Note! Yesterday I tried a great healthy recipe called Healthy Vegetable Lentil Soup. All the Indian spices were a wonderful way to warm up and turmeric is sooo good for you. However, it is a copyrighted recipe which can be found on Wanda's website, the happy cooker.com.

Those contrary potatoes you all are talking about. Been there done that. Its been a long time ago when I heard about the "tire deal". I had a customer at the same time that was having a go at it. At the end of season Nothing! We both had failures. I believe its the nitrogen that is the crux of the situation. Have had the same problem with sweet potatoes, radishes -all tops no bottoms ha ha

Sue, I also have the Reynolds Vacu-seal hand tool, but can't find any bags anywhere! Have you tried the Reynolds web site? I finally bought a Seal-a-Meal. These bags are more readily found. This works better than the Reynolds one, too. Mine cost me $49.00 at K-Mart. It was well worth the cost!

JL in South Jersey, this is my recipe for stuffed peppers. You can omit the onion easily; however, I can't cook without onions! Love 'em!

Stuffed Peppers
1 pound lean ground beef
1 onion, chopped
1/2 cup uncooked instant rice – I have usually just used already steamed rice, about 1 c. cooked
1/2 cup water
2/3 (14.5 ounce) can Mexican stewed tomatoes - or 1 can (14.5 oz.) Rotel
2/3 (14.5 ounce) can stewed tomatoes, chopped
salt and pepper to taste
4 large green bell peppers
1 (8 oz.) can tomato sauce, optional
4 slices cheddar cheese
sour cream - optional

In a large skillet or medium stock pot, brown the beef and onion over medium heat. Drain fat. Add rice, water, diced tomatoes, and stewed tomatoes. Season with salt and pepper. Simmer until rice is tender. Preheat oven to 325 degrees.

Cut the tops off the bell peppers and clean out the seeds and membrane. (Note: You may have to slightly slice the bottom of the peppers to make them stand up.) Fill peppers with meat mixture. Add one slice of cheese on top of each pepper.

Place in a casserole dish and bake in a preheated oven for 45 min. covered or until peppers are as tender as you like. Served topped with tomato sauce and/or sour cream. Serves 4 NOTE: When I make my rice ahead of time I just mix the stuffing ingredients with the rice and stuff the peppers. Then you omit the water. listed under Beef on Nancy's message board.

Pineapple Puff Salad

1 can (regular) crushed Pineapple undrained
1 can mandarin oranges. undrained

Stir in 1 package "Instant" Pineapple Cream Pudding Mix. Mix well and let set for 5 minutes. Then, stir in a 8 oz. carton of Kool Whip. Chill and serve.

Strawberry Glaze

Dissolve 1 3 ounce package strawberry gelatin in 1 cup hot water. Chill until slightly thickened. Arrange fresh whole strawberries in pie crust. Spoon gelatin over berries. Chill until firm. Garnish with 1 cup whipped dessert topping or whip cream.

To Jim in Texas, I have never eaten the fish that you say are almost leaping into your boat, but I am ready to head for Texas and hunt you down just to try them! You sure make fishing sound like fun, and I'm sure it is. BTW, how do you cook those crappies, and what part of Texas are in, if you don't mind saying?

This is for Val in S. Ga: We use Nature's Miracle for dog urine odor. It can be purchased at any Pet supply store or even on line.

This is for Val in Ga.Three parts vinegar to one part water for your puppy urine odor. Just saturate the spot and then blot with paper towels
or old cloth. When training your puppy clean up as soon as possible. I never scold when I house break as it only frightens them. Try to keep a
eye on him/her to know their pattern. Usually it is soon after eating or consuming water. Hope things go well and quick in your house training.

Jodi in KCMO wrote in the 2/5/10 Newsletter that she cut her finger from the blades of a Ninja blender after putting it into her dishwasher.

I learned very early on to never put anything sharp in the dishwasher. Yes, the dishwasher is a wonderful and great invention but it doesn't take but a minute to hand wash knives and blades from appliances.

I have never put blades from appliances or knives in the dishwasher. That can dull your good knives and blades of the appliances and also give you a really good cut.

This goes for all my appliances with blades, food processors, blenders, chef's knifes and paring knifes, everything you want to preserve the cutting edge. This will also prevent you from getting cut by reaching into the dishwasher. You may know there is something sharp in there but does everyone else who may live there?

I always wash and dry them and put them away immediately. I still have appliances and knifes that still retain their edge and sharpness and many I purchased over 40 years ago. Respect them and treat them kindly and they will give you many years of service.

For Val in s. Ga for pet odors

I was told to use a product called kym-zyme (not sure on the spelling). You can purchase it from your local cleaning supply store. My local cleaning supply store makes its own version of this product and it is less expensive. Worth every penny you pay for it in my opinion.

Val in S GA asked about urine odor. The most amazing product I have ever found is Rug Doctor's Urine Eliminator. It is so amazingly simple to use - just spray the spot until it is completely wet (enough to get down to the pad), cover with a damp towel and let stand 24 hours. Remove the towel and allow to dry. I didn't believe it either, but it even removed really old spots from before our dog was house trained. It takes the odor and stain out - as if they were never there!

Looks as if we're going to have to dig out again. Monday is supposed to bring our third snowfall since Christmas Eve!

How lovely to have a new puppy and I’m sure he/she is giving you a great deal of pleasure… HOWEVER… puppies are little ones and with that comes ‘puppy’ problems. My answer for you is white vinegar… vinegar is fantastic for most everything. If you have ‘puddles’ on your carpet.. then blot up as much as you can… and use just a small amount a white vinegar/water solution and apply to the ‘special place’. White vinegar (do dilute it a bit) on other surfaces and is also (as I’ve just discovered) a great deterrent to those little summer pesky black ants.. just spray on your counter tops – wipe and no more ants for a while.

I wish you well with your new addition.. what a happy time.. don’t forget also.. if he/she is a ‘nibbler’…..just a slight touch of oil of citronella works well. When our little gal was a small one, she took a shine to the fringe of the Persian rug.. just a touch of the citronella and not another attempt.
