I'm so glad to hear that Nancy in
Tennessee, and her family, liked my
"Wild Salad" recipe so well. Here is a
similar one, that would be excellent for
St. Patrick's Day.
Green Irish Fluff Salad
1 container (12 oz.) Cool Whip, thawed
1 can (20 oz.) crushed pineapple,
drained
1 pkg. (3 oz.) lime flavored Jell-O
1 pound container small curd cottage
cheese
Mix cottage cheese, dry Jell-O and Cool
Whip together well; fold in well drained
pineapple. You could probably also add a
15 oz. can fruit
cocktail, well drained. Chopped pecans
and/or miniature marshmallows are a
welcome addition to any salad like this.
I just stick to the original recipe, as
is wonderful just the way it is!
