My daughter got this recipe from a co-worker, after tasting it at a office potluck. I make it for supper often, as we all like it so well, and is easy to put together.

Crustless Bacon Quiche

1/4 cup melted butter
1-1/2 cups milk
pepper, to taste
3 eggs
1/2 cup buttermilk baking mix
1/2 cup Swiss cheese, shredded
1/2 cup Cheddar cheese, shredded
8 slices of bacon, cooked and crumbled

In a medium bowl, beat together the first four ingredients, using a wire whip. Stir in baking mix. Pour into a 9 inch round glass pie dish.

Sprinkle cooked bacon and cheeses over the top. Bake at 350º for 40 minutes. Let sit for a few minutes before slicing and serving.

Note: I most always double this for us, and bake in a 9 x 13 inch baking
dish.
