Bread Stuffed Peppers
4 peppers, any color. Core and cut in half to make 8 halves.
Mix:
4-5 tbs olive oil (you want the finished stuffing mix on the
moist side)
1/2 cup finely chopped onion
2 1/2 cups seasoned breadcrumbs
1 cup shredded provolone, mozzarella, Romano or a mix
1/3 cup chopped fresh parsley or 2 tbs dried
2 cloves minced garlic
3 chopped anchovies (optional but they do add a lot of
flavor)
1 tbs chopped capers
1/2 cup chopped green olives
1/2 cup chopped pepperoni or salami
salt/pepper
Stuff the peppers without packing them too tightly, place
them in a baking pan. Bake 400 oven for one hour. I put a
foil tent (do not seal) over my peppers for 1/2 hour.
