In the Oct. 29, newsletter, Redskin in Brockville, Ontario asked for meat pie recipes, here is one I got from my mother-in-law some years back. Natchitoches Meat Pies are well known around our state. The story behind the recipe is that an old blac man used to go around town selling the hot meat pies to stores and businesses each morning. This was many years ago, so I don't know if this is really how the love of meat pies got started in Natchitoches or not, but almost everyone there has their own recipe. Many pie recipes from this area are very spicy, this one is not too spicy, but you could add more red pepper if you wish. Smaller meat pies are often served at parties.

Natchitoches Meat Pie
Number of Servings: 16

1 lb ground beef
1 lb ground pork
1 med bell pepper, minced
1/4 cup parsley, minced
2 ea sticks celery, minced
1 ea bunch green onion, chopped
4 cup flour
1 Tbsp baking powder
2 tsp salt
1 ea egg
2/3 cup shortening
ice water

Cook bell pepper and celery in a little oil till soft, add ground meat, onions and parsley, cook till done, season to taste.

Mix flour, baking powder and salt, cut in shortening, add egg and enough water to make soft dough. Roll out a walnut size ball into a circle, add meat mixture to center, wet edges, fold over and crimp edges. Fry in about an inch of hot oil till brown, turn, brown other side.

NOTE: I had to make another half recipe of dough, so next time I will make larger recipe.
