My mother made this Date Roll every year
at Christmas. She passed away 3 years ago, but I recently
found a file box of her recipes, and this was in it. Also in
the box was a recipe for Caramels from my Aunt Wilma. I made
them a couple of weeks ago, and they are heavenly!
Date Roll
3 C sugar
3 TBSP light Karo
1 cup cream (I think evaporated milk would work fine)
1 cup chopped dates.
Chunk of butter
vanilla
pinch of salt
Cook on slow heat until it forms a soft ball. Add 1 cup
nuts, chunk of butter vanilla and pinch of salt. Beat until
creamy and almost set in pan. Put in cloth wrung out of
water and work into a long roll. (My mother used cheese
cloth.)
