Hi everyone. Here is another handwritten recipe from
the boxes full of recipes. It is stained and faded, but I have another copy
since this was not only my favorite cookie when living at home, but is my own
children's favorite. This original recipe only has the ingredients with
"ungreased sheet-350--10 min" at the end. I assume she made this copy for
herself and NOT for inexperienced bakers. My copy has the directions, so here
goes:
California Rangers
1 cup shortening like Crisco
1 cup white sugar
1 cup light brown sugar--packed
2 eggs (large)
1 tblsp milk
1 tsp. vanilla
2 cups all purpose flour
1 tsp. soda
1/2 tsp. baking powder
1/2 tsp salt
2 cups rolled oats (not instant)
1 cup coconut
2 cups corn flakes
Sift flour, soda, baking powder, and salt together in a bowl. Set aside. In
large mixing bowl, cream shortening and sugars, add eggs one at a time and mix
well after each addition. Add milk and vanilla. Mix. Add flour mixture a little
at a time to the creamed mixture, scraping bowl often. Now add rolled oats,
coconut and cornflakes. Mixture will be thick. I have always added these last 3
ingredients by hand mixing with a wooded spoon.
Place rounded teaspoonful of dough on ungreased cookie sheet*. Bake at 350
degrees for 10 minutes.
*I have used my hands to squeeze the dough together from the teaspoon before
putting on the cookie sheet.
These are chewy cookies and so good.
