Nancy & Nancylanders: I want to share a recipe that was
given to me recently and which is in my opinion a "Keeper"..

These Au Gratin Potatoes have got to be 'By Far' the best
and easiest that I've ever made. You won't be sorry you made
this great side dish that will compliment almost any entree.
Au Gratin Potatoes
3 Tbsp butter
3 Tbsp all-purpose flour
1 1/2 tsp salt
1/8 tsp ground black pepper
2 cups milk
1 cup (4 oz) shredded cheddar cheese
5 cups peeled and thinly sliced potatoes
1/2 cup chopped onion
In a large saucepan, melt the butter over low heat. Add in
the flour, salt and black pepper and stir until the mixture
is smooth. Gradually add the milk and bring to a boil; cook
and stir for 2 minutes or until thickened. Remove from the
heat and stir in the cheese until melted. Add the sliced
potatoes and chopped onion and stir well.
Transfer the mixture to a greased (can spray with non-stick
cooking spray) baking dish. Cover and bake in a preheated
oven at 350? for 1 hour. Uncover and bake for 30 to 40
minutes longer or until the potatoes are tender.
Yield: 6 to 8 servings.
Cook's Note: I like to soak potatoes in cold salted water
for 30 minutes to 1 hour prior to using them in a recipe - any and all potatoes,
i.e., for boiling, baking, frying, etc. I just like the slightly salty taste
that the soaking gives to them. Of course, if you are on a salt free diet, this
would not be the thing to do.
