My DIL made this as part of dinner last week and I've made it since because it was so tasty, simple and good for you!

Apple Spinach Salad

2 bags of washed fresh baby spinach
2 Granny Smith apples - sliced thin, peel if desired
1 large red onion - sliced very thin

Dressing
1/8 cup extra light virgin olive oil
Salt and ground pepper to taste
1 teaspoon cider vinegar

Mix everything together and drizzle with dressing.

I wonder if some chopped walnuts would be good added? Loved the pictures of Little One!
