This recipe is for Sandra from Oregon. Sandra, my family
really loves this cake. It is like a pound cake. And, when I
take it to any function, there isn't any leftover to bring
back home.
Orange Crush Pound Cake
1 cup Crisco Shortening
½ stick margarine, room temperature
2 3/4 cups sugar
5 eggs
3 cups plain flour
1/2 tsp. salt
1 tbsp. vanilla extract
2 tbsp. orange extract
1 cup orange crush soda
Cream together shortening, margarine and sugar. Add eggs,
one at a time. Add the other ingredients and mix well. Bake
in a 325 degree oven for 1 hour and 25 minutes.
Topping:
1/2 stick margarine, room temperature
2 (3 ounce) packages cream cheese
1/2 tsp. orange extract
2 cups powdered sugar
Put on cake while warm. ( I wait until it is almost cooled)
May be glazed with 1/4 cup powdered sugar, 1 teaspoon grated
orange peel, and 2 teaspoons orange juice mixed until
smooth. (I don't glaze mine.)
