Mr. Drinkwater have I got a recipe for you and any of the Nancyland Family. This is a T&T recipe not only by me but countless of other San Diegoans. It's a recipe from a local restaurant and is so popular it's been published each holiday season for the past 5 years in the San Diego Union Trib. It's probably a little different then what you're looking for but I think you'll like it. At least I hope you do. :)

Indigo Grill Indian Corn Pudding

1 pkg. Jiffy Corn Muffin mix
1/4 c. PLUS 1 1/2 T. milk
1/4 c. butter, melted
1 T. Tabasco sauce
1 c. creamed corn
1 c. grated cheddar cheese
1/2 c. sour cream
1/2 c. mayo
1 white onion, thinly sliced

400 degree oven. Butter 12 muffin tins or line with paper liners. In a large bowl, combine the first 5 ingredients. Mix well. Fill tins 1/2 full. In another bowl combine the remaining ingredients, and mix well. Top each muffin with this mixture to fill pan. Bake for 30 minutes.
